This was really good and I did use the Miracle Whip! I also added 1 T. Penzeys Bold Taco Seasoning, 1 t. of my dried pepper flakes and pepperjack cheese. It had a nice zip! Mr. Green


Beef Nacho Casserole

1 pound ground beef
1 jar ( 12 oz) chunky salsa
1 cup frozen corn, thawed & drained
3/4 cup Miracle Whip
1 tablespoon Chili powder
2 cups crushed tortilla chips
2 cups shredded Colby / Monterey Jack cheese, divided

Pre-heat oven to 350º. Brown meat, drain. Stir in salsa, corn, miracle whip & chili powder. Layer half of the meat mixture in a 2 quart casserole ( I use 8x8 Pyrex dish) , add crushed chips, half of the cheese ( again more or less, depending on how much cheese you like) Repeat layers, ending with cheese
Bake 20 minutes or until thoroughly heated through and cheese is melted.
Top with shredded lettuce and chopped tomatoes if desired. ( I don't do that, I prefer to serve a salad separately ). Serves 6.

Posted by Sabine – notes - I got this recipe many years ago out of a magazine, don't remember which one. It's a recipe that was put out by the company who makes Miracle Whip

You could serve lettuce, tomatoes, sour cream & guacamole on the side. Enjoy, it's a favorite at our house and it re-heats nicely.

** DO NOT sub mayo for the miracle whip, I am not a miracle whip fan, but it does make the difference. My daughter used mayo and it didn't taste the same at all.
