Hello to all the users and specially Albert. I am a long time browser of these sites but somehow never noticed the forums (speaks volumes about my computer skills). I have sent in a recipe for pasta a long time ago that Albert posted and now I am after your help.
Has anyone got a great recipe for 'Pasta alla Norma' if so please let me know. Ricotta salata is not available where I live.

Hello, Big G, welcome to the Forum!
If you do a Google search of "Pasta alla Norma" you will get a good bunch of recipes. One I ran across said you can substitute pecorino for the ricotta salata.... but, they say, it is not quite the same. Perhaps you can get the sheep's milk and make your own!
Not a big fan of either eggplant or ricotta of any kind, but then, I am always willing to venture into new territory - although both of those would be pushing it for me.
