I have been baking bread from scratch (even grinding my own organic whole wheat flour) since I was six. (My brother had to be on a very restrictive diet for his health.) A good pizza crust makes or breaks a pizza. The problem is that it is very easy to make a good sauce. But a good pizza crust... well, there are so many ways you can ruin it. Rancid flour. Doughy texture. Too tough. Too soft. Bland flavor like library paste, etc. That's why I usually judge a pizza by the crust. |

Call me crazy but I don't like tomato sauce (or gravy, if you prefer). When I get pasta, it's aglio y olio for me. So the crust has to be GREAT!
Note: I'm from Connecticut, but now live in South Carolina - trying getting decent pizza here! If anyone knows of any good pizza in the Columbia area, PLEASE let me know. |

This is a great discussion...
When I posed this question to Ed LaDou in Legends of Pizza Volume 2, he was adament.
According to Ed they were both equally important.
For me, I think you really need a great crust to make a great pizza....
But I will admit...a great sauce will even make an English Muffin taste good.
My vote is for the crust, however.
I just love that crust!
