Mike writes:

Hi Albert.

I just reviewed a video from your website -

http://www.albertgrande.com/pizzavideos/video/eKtsMfmQ_0s -

and like all other dough recipes it seems simple enough. However I still cant get that light crispy, yet chewy, crust with the small air bubbles he describes in the video above.

My dough rises nicely. Double in size etc. Even when I put the pizza on the stone and watch it bake I see it rising around the edges thinking , "ah this is the one". But when I cut it up the crust is dense and cardboard like.

Oven is hot, stone is hot (oven on for about 45 minutes with stone inside). Don't know what else to do. Maybe I need to let the pizza sit and rise a bit more before putting into the oven?

Help. I love pizza.

Mike.

Can anyone assist Mike?

I would ask:

"Do you roll the dough out?" Rolling gives you a different result than "tossing" it.

And, how thick (or thin)?

and,

"How long do you bake your pizza?"
