I don't know the answer to your question, Shelley. Maybe someone here at the forum can help.
I have used convection ovens for pizza demos and believe me I struggled.
I could never get the crust done right. The top kept browning before the bottom.
I was using several pizza stones. I finally cranked up the oven and then truned it off periodically to let the crust cook.
I would not recommend that method.
Pre-cookig the pizza crust may help.
Does anyone else have any tips for Shelley?
