Hi!
Thanks to my pizza "bible" -- THE ULTIMATE PIZZA MANUAL:

I discovered GUACAMOLE as a topping--added cold after the pizza is baked! It's incredible!! All the flavors and ingredients in guacamole complement pizza: heat, tomato, onion, salt, and cilantro:
And here's my recipe for the best guacamole, derived from and improved from Rosa Mexicano's recipe. (Theirs is excellent; this is way better.)
It's a double batch, but you can halve everything for one avacado. ENJOY! Jane

Guacamole (Two Avacados):
ONION: 2-1/2 TBS in the molcajete + 2-1/2 TBS aside
CILANTRO: 6 TBS in the molcajete + 6 TBS aside
SALT: 1-1/2 tsp in the molcajete
TOMATO: 6-8 TBS aside
CHILE PASTE: 1-1/2 tsp aside (OR CAYENNE PEPPER 1/4-1/2 tsp)
NOTE: Use two avocados that are slightly less than fully ripe (fairly firm).
Mash the ingredients already in the molcajete. Slice TWO HAAS AVOCADOS in half, slice meat into 1/4" strips, scoop out of the skin, and mash in the molcajete.
Add all “aside” ingredients and thoroughly mix together. |
