Mr. Varasano (may I call him "Jeff"?) has given some information about which I have wondered, such as, what is the purpose of adding olive oil to pizza dough? What would the result be if I don't include that? Read his commentary and try his ideas.

I have long understood the process of "proofing" - but he says it's not necessary.
