Tom asks:

Hello,

I would like to get your opinion on the best pizza sauce, dough and cheese that you have come into contact with.
I'm a pizza lover and always looking to make a great pizza for my family. Have you ever heard of capplitta tomatoes? The restaurant Grimaldis uses these tomatoes in their sauce and its great!

I'm basically looking for the best ingredients that I can find to make a great pie. I'm reading the book American Pie and would love to try to get in contact Peter Reinhart. Thanks and I'm looking foward to hearing from you.

Tom

Can anyone assist Tom?

"Best" and "great" are very subjective terms. Some people swear by the factory-made frozen pizza from the grocer's freezer, with "artificial cheese" and miscellaneous by-products while others won't settle for anything that is not certifiably organic.

Some only use fresh tomatoes; others are happy to plop some Ragu on a store bought crust and call it homemade pizza.

There really is no answer to this question.....
