Marco Asks:

I made dough last sat and its still in the fridge.
Hahaha. Can I use it as starter for my next batch?

My Response:

Yes. Absolutely.

I have used dough
4-5 days in the fridge. The taste will be amazing! If you are going to use
the dough longer, just freeze the dough.

Let me know how
you make out.

pizza forever,

albert

Marco reponds...

So would I use half to half starter to fresh batch? Then put the remaining half back in the fridge for next time?

My reply:

Yes you can do that.

But you are going into very advanced dough techniques. You will need to find another pizza expert to advise you. I make a simple pizza dough.

Using starters is an advanced method of dough making.

I recommend you make the dough, and let it proof in the fridge overnight. simple easy.

Then make the pizza.

If you want my recipe, find it here:

.

If you are trying to use the dough as a strarter I recommend you get a copy of my friend Peter's new book.

You can find it here:

Any other comments about using dough as a starter?

albert

That's interesting -- I just posted about using a starter in "Dough Secrets."

Ahhh.... great minds! Must be the pizza!
