Albert, do you know of a good whole wheat recipe? and or tips and tricks. We bought store purchased dough...very bad.

My response:


Whole wheat pizza dough is very tricky.

I know Peter Reinhart had been working on one.

He told me the dough needed to be very hydrated.

One thing you may try is a 50 / 50 split of whole wheat dough and white flour.

I 'll ask at the forum to see if there are any other suggestions..

Any ideas?

Here's a response I got from Harry:


Hi Albert, Yes, I got the recipe. Indeed, I've used it twice. We will eat pizza when we get home tonight.

I substituted two cups of whole wheat flour to make a whole wheat dough. That gave the crust a little extra zing and crispiness.

We love your pizza dough recipe and will continue to use it and spread it around for friends and family.
