My response:Great question Scott.

I worked with a chef several years ago
and he claimed to be able to produce gluten free pizza.

After a number of attempts, he was able to produce
a gluten free pizza. The taste was terrible. That was a huge problem...

At this time I do not know any recipe
that will produce a good tasting guten free pizza.

I am sure there is one out there. I just do not know it.

I will post your question on the forum to see if anyone has any ideas.

So does anyone on the forum have any ideas on how to produce good tasting gluten free pizza?

Also in your answer if you could explain what actually is a gluten free pizza?

Im betting that he mainly meant the dough, because most toppings (except for really unique ones) would be naturally gluten-free.

I have two autistic children so a gluten-free diet is something I'd looked into before. My husband has recently been diagnosed with Celiac Sprue, so for him a gluten-free diet is now required. No wiggle room on this. Since gluten is a naturally occuring protein in grains like wheat, this means major changes. Do you have any idea how many things contain wheat flour?

Aside from wheat, gluten is also in rye, barley, and possibly oats (oats are controversial). No more standard flour for us. And no more chain pizza either. So I too will be trying to find a good gluten-free dough recipe. I'll keep you all updated on my progress.

Lots of research and label reading involved in this. Did you know that there are toothpastes that contain gluten? And even corn and rice cereals often contain wheat starch?

One bright spot though, we'll finally be buying a bread machine.

I've tried some GF pizza dough mixes and have not been happy with the results thus far. The manufacturers seem to think that adding a lot of spices will make up for the problems with texture and consistency.

That said, if you don't mind heavily spiced dough you can try Chebe or Namaste pizza dough mixes. They're fairly easy to make and have better consistency than most.

Depending on where you live gluten-free mixes can be hard to find. I order most of our GF products online through Amazon (subscribe and save is awesome!). This summer I'll be getting back into working on finding the best GF pizza dough.

Elizabeth Barbone has some good GF cookbooks, based on mixes that you make at home. I haven't tried her recipes for pizza dough yet. There is one for thin crust and one for thick crust.

Also King Arthur Flour has put out a line of GF flour and mixes this year. Depending on shipping costs, I may order from them.

As for trying to come up with one's own GF pizza dough recipe, I do not recommend it unless one is highly trained. Converting anything to gluten free is tricky. But if anyone is game to try it, I'll be happy to help out as much as I can.

I'll be around more often now that I have the link again. Life has been unbelievably crazy!
