I did try out your pizza dough, and yes it was nice.
I have just recently opened a pizza shop PIZZARELLO’S (for my son George, two months running)and have been looking for ways to help him.
He was in Greece for three years, and just recently came back to South Africa.
He came back with some recipes that he picked up there.
He uses :
1 x 12,5 kg cake flour SNOWFLAKE
3 x 10 gram instant dry yeast ANCHOR
1 x ˝ cup sugar
1 x ˝ cup salt
1 x full cup olive oil EXTRA VIRGIN
1 x 100 gram semolina flour SNOWFLAKE
If you get a chance try it and tell me what you think.
If you think he is using , or portioning too much or wrong ingredients
Please let me know.
Do you have any good recipes for the tomato base, if so please let me know.
