Albert,

I have made pizza twice since visiting your site. My family said that it was the best pizza they ever had, but they didn’t grow up eating Pepe’s like I did!

I am really getting into it and just ordered three 14” X 16” stones for my oven. My oven is able to get up to 600. For my first batch I used all purpose flour and the crust was dry and light with no chewy texture.

The second batch was made with King Arthur bread flour and I had to increase the water to get the right consistency.

I have ordered the King Arthur High Gluten flour from their website for my next try. Thanks for making your site so accessible and allowing me to have so much fun with my kids.

Thanks so much, Ken.

I do appreciate your positive words and attitutude!

Your pizza will just get better and better.

Your friends will praise you...your kids will love you.

BTW I always say, if anyone asks (and they d a lot...)

if I knew how to make pizza like Pepe's, I'd open a pizza restaurant instead of a pizza website.

Also please check ut this resource for pizza stone info...how to clean and maintain...
