I haven't had time to really study it but I plan to this weekend and make a 4th of July pie. I'm always looking for different books and ideas on food in general, but pizza or apizza (ah-beets) as it was called in my family is probably my favorite. All Italian food for that matter. I was lucky as a kid to have been taken to Pepe's and Sally's and still go there today.

I have added Modern pizza to my list as well, they are the BIG 3 in my book.

All 3 in New Haven Ct., but you knew that. It's funny I see reviews from people who absolutely do not like Pepe's or Sally's because of the blackened crust, they were told how good the pizza was and can't believe it was burned!

I always say if you have to try and explain this to people, they just aren't going to get it.

It's the best part of the pie as far as I'm concerned. But some people think XXXXX is the best pizza. It's just what people like I guess.

I'm always looking for a way to duplicate the New Haven pizza sauce but it's not easy. Have a Happy 4th and I'll keep you posted on the pizza.
