Hi Juan.
I am here to help you in any way that I can.
I have a few suggestions for you.
First since you pruchased the Pizza Therapy Pizza Book, I will assume you followed the recipe.
Using olive oil in th crust should make for a softer crust. So using the basic pizza dough recipe of:
4 Cups of flour, 1 and 1/2 cups of water, 1/4 cup of oli, 1 teaspoon of yeast and 1 teaspoon of salt.
This should give you a fairly soft crust.
(When I make my pizza dough. I use a bit more water and omit the olive oil but I like my crust with more crunch).
Next let's look at the flour you used. For a softer crust, try using 100% bread flour. This will help soften the crust.
Next let's look at the oven. You need a very hot oven to cook you dough quicly. Did you preheat the oven for 45 minutes at 500+ F? If you are using a pizza stone preheat the oven for at least (at least!) one hour.
You are cooking pizza, so it should cook up fairly quickly. Depending on your oven: 7- 10 minutes max!
Pull out you pizza just as the bottom is turning color.
Also remember for pizza, less is more. You don't want to overload you pizza with to much stuff on top.
