Albert!

I got problems and please help. Your recipie is so good but there are times I kneed the dough, place it in the fridge and bring it out and it doesn't rise.

I am using instant dry yeast as a pose to the old way of placing it in water and sugar however I don't think that would cause the issue. Anyways, what's your take on it.

I followed your instructions to the t and something changed.

Please help.

Hi Dave,

You are absolutely right. The method of activating the yeast (either with warm water and sugar or cold ferment) should have no bearing at all.

Check to make sure the yeast is good. take a teaspoon of yeast and 1 teaspoon of sugar, mix in 1/2 cup of warm water. You should see bubbles start to form and a foam should be on the top of the water.

If nothing happens, you may have a bad batch of yeast. Discard the yeast.

And try making your dough with new yeast.

Let me know if this helps...
