A Cheese Gasket Pizza is a craze with BGE Eggheads (a lot of cheese that cooks around the crust). We made it last year. VERY good pizza (though it might clog an artery Wink ).


Excellent Pizza Smile


Chicago Deep Dish

10 1/4 inch cast iron skillet (olive oil the bottom before adding dough to rise)


Egg at 475 degrees, bake for 25 to 35 minutes.

Dough

3/4 c. water
Pinch or two salt
2 c. flour
1 t. yeast

Toppings as desired, cheese triple (aka cheese gasket)! Wink

I made the dough in my bread machine the day before, let it rise a few hours in the CI



Topped with sliced Boars Head mozz




Next layer, ground pork seasoned with fennel, black pepper and parm




A few toppings (sweet onion, jalapenos and jalapeno black olives)





Sauced



And of course more cheese, mozz, parm and Boars Head Butterkase











We were impressed with our first deep dish on the BGE (it was very good heart clogging good). Razz
