These were outstanding!

I add chopped jalapenos to the meatballs and make a glaze with sweet chili sauce, Sriracha sauce (aka Rooster sauce), chopped cilantro and sliced green onions. I just toss the meatballs with this after they bake and pop them back in the oven to heat through.

Definitely a keeper!

Thai Chicken Meatballs

2 lb. ground chicken
1 c. fresh breadcrumbs (I used plain dried)
4 green onions, sliced
1 T. fresh cilantro
1/4 c. sweet chili sauce
1 to 2 T. lemon juice

oil for frying

Preheat oven to 400º

Mix the chicken and breadcrumbs in a large bowl. Add the green onions, cilantro, chili sauce and lemon juice and mix well.

With damp hands form into meatballs or large enough to use as burgers.

Heat the oil and shallow fry the chicken meatballs in batches over high heat until browned all over. Place them into a baking dish and bake until cooked through, about 5 minutes or 10 -15 for the burger size.
