I recently had some conversations with the Legend of Pizza, Ed Ladou.

Just for background information, Ed was responsible for putting together Wolfgang Puck's pizza menu. He also assisted in the development of The California Pizza Kitchen menu.

He now has his own pizzeria called Caiote Pizza Cafe, located in Studio City, California.

Ed has been known for "pushing the envelope" with what can go on top of pizza. He has experimented with various tastes.

His ideas came from looking at all of the wonderful ingredients available to him, particularly the fresh produce.

He started to make pizza with fresh zucchini, eggplant, and spinach, fresh garlic and shrimp. He also felt many of the pizzas he was making did not need a pizza sauce so he started to experiment in that direction.

You need to understand this was quite radical at the time. Pizza was mostly seen as having very limited ingredients and toppings.
He really paved the way for people to think about pizza in a totally new way, by using fresh native produce, among other things.

Ed said he is continuosly developing new ideas and concepts.
