I was curious to know what you recommend for mozzarella on thin crust Napolitano pizza. We’ve tried fresh mozzarella in water, but it seems to dissolve on the pizza and doesn’t have much flavor.

We’ve tried other “fresh” mozz., soft, but not much flavor either.


I don’t think we could find buffalo mozzarella, so what brands would you suggest?

Hi Marie.

Thanks for your great question.

I live in Hawaii and the brands of mozzarella we can get are very limited.

I usually buy my mozzarella at Costco. I buy whatever is on sale.

I have found buffalo mozzarella there occsionally.

And you are absolutely correct: whole milk fresh mozzarella tends to puddle when cooked. It does not act like other mozzarella.

Personally I like the taste..There is not much of a taste. Buffalo Mozzarella has a little different taste, but not much.

You may want to try some other types of cheese like pecorino, asagio, parmesan, even ricotta or provolone. I have evn used goat chees with good results.

You really can use any type of cheese you like....any kind!

All these cheeses have a great taste and taste great on pizza.

If you really want to try a different kind of cheese try gorgonzola. It''s a very strong cheese and not for everyone.


So try some different cheeses on your pizza. You will find some that you really like.

And that is the best tasting pizza...pizza that tastes just the way you like it...
