I use a fork to pop the bubbles, but I am not sure what good that does.
When you bake a pizza in the oven, you don't worry about bubbles anyway, do you? I do mine on a Weber One-Touch, so I bake one side of the crust, remove it, put the toppings on the baked side, and put the unbaked side on the grill for the grand finale.
Not sure why popping those bubbles is so crucial!
BTW, I rotate the dough also, to try to keep the heat even. _________________ "Papa Don"
