Does anyone know how long I can keep dough in the refrigerator before it goes bad?

I have kept dough in the fridge for at least 4 days without any problems.

Whenever I do pizza demos at school (Waialua High and Intermediate School), it is usually at least a 3 day process. Because of time constarints it is not possible to make the dough and the pizza on the same day.

Because the classes are every other day, I will make the dough during one class. I drizzle a little olive oil on the dough, cover it, and put the dough in the fridge.

Two days later I let my dough warm up to room temperature for at least an hour before I use it. This method works well. All of my demos have been successful.

If I was going to use the dough more than 3-4 days later I would just freeze the dough.

Hello,
I'm new to this forum, but have been a part of http://groups.yahoo.com/group/brick-oven for a little while now. Thanks to all the great help you find in these places I've really come a long way in developing my knowledge and skills for both pizza and other baking.
I was actually in search of answers to questions I thought there was NO WAY I would ever be able to communicate properly when I found this website - www.correllconcepts.com/Encyclopizza - (sorry if i don't post it correctly as a link). I've bookmarked it because I know I'll be visiting it frequently! Your question is answered in detail there, and many scenarios are given to adapt whatever it is you're doing to however you WISH to do it.
