Pete asks:

ok it seem that every time I try to make pizza the dough is to thick , every time I try to stretch the dough it tear so pizza making must not be my hobby .

I use ap flour, bread flour with gluten added, let it proof in frig over night , took out and rest before using two hours , there is a trick to making good nigh style pizza is it practice or weather, the water...

My response:

Wow, Pete. you are doing everything that I do. I'm surprised that your dough is tearing.

Although I rarely use one, you may want to try using a rolling pin to stretch out your dough.
Many commercial pizza places use a sheeter which essentially sends the dough through rollers to stretch it and make it thin.

Pleas give it a try and let me konw how you make out....

Any other suggestions?

albert
