I have a kitchen aid professional 600 mixmaster with a dough hook. Could you rewrite your pizza receipes to fit the kitchen aid professional 600 mixmaster? I hope it won't be too much trouble for you!

My response:
Sue I have used a Kitchen Aid to make the dough recipe.
Here is my advice: if the dough is to dry...add a little water.
If the dough is to wet...add a little flour.
After you finish mixing it with your Kitchen Aide, roll out the dough. Feel it with your hands. It can be a little tacky. It should not be to dry.
