Alain asks:
Hi Albert,
I am looking to find information specifically on pizza al taglio. The rectangular pizzas baked in pans. Do you know any books that speak about the way to prepare the dough for such pizza?
Thank you.
My response:
To tell you the truth, I'm stumped on this one, Alain.
If anyone has any information on pizza al taglio, could you please post it here.
pizza everywhere,

Pizza "al taglio" is literally, "pizza by the cut" - or by the slice.
The pizzas are long and narrow, and slices are cut to order. The crust is thicker, but I haven't seen any differences in how to prepare it other than that.
Usually, there are not more than two toppings, other than cheese and sauce.
You can find a good bit of information at
