Great question.
As with everything, I recommend you use the cheese that tastes best to you.
I like to use mozzarella that is made from buffalo's milk, if I can find it.
I also like to use provolone, parmesan, gorgonzola, pecorino and asagio.
As far as pre cooking the crust: my experience is if your oven is hot enough, 500+ F, there is no need to pre bake the crust.
Temperature is critical: the hotter the better.
Also you don't want to overload your toppings on your pizza. When you make pizza, less is more...
