Vincent asks:

Hi Albert,
I think I must have screwed up. Although I made the dough to your specs, I think I should have used it right away instead of a week later. Although it was sealed in tupperwear in the fridge I put it out to warm and finish rising.

I rolled it out and baked it with all the toppings but the dough, although brown on the bottom was uncooked inside.

It seemed like a lot of oil for a dough recipe. Has anyone else had the same problem I encountered?

Thanks for any suggestions and Pizza on Earth! Vincent

My response:

Hi Vincent.

Thanks for writing.

You can use the dough recipe and omit the olive oil...no problem.

Keeping your dough in the fridge for 1 week should be OK.

Here my be the problem:

What temperature did you cook your pizza?

First: pre-heat your oven for an hour.

Your oven needs to be minimum 500+ F.

Minimum.

Also: don't pile to many toppings on your pizza. Remember when you make pizza:

less is more.

try it again, and please let me know how you make out.

pizza forever,

albert
