Last night was the night!
I've tried 4 other dough recipes, and this one is the winner. I used my Kitchenaid Mixer to knead the dough - 10 minutes,
Took a lot more flour than the 4 cups but the end result was great! I really like sourdough.
Do you happen to have a recipe using a sourdough starter?
Or - for a little more flavor in the regular dough, Could I add a bit of citric acid (Fruit Fresh) to the flour?
There was much too much dough for the two of us to eat/use in one setting, so I formed mini rounds and froze them. Hopefully when they are thawed I can just roll out and go from there? What you think?
Thanks for your generosity in sharing this great recipe!

I'm glad you are making pizza Cathy.
Your pizza wil just get better and better.
As far as freezing dough: I've had very good luck freezing dough. I usually drizzle a little olive oil in a zip lock and freeze.
Also: when you make your dough it's ok for it to be on the moist side. Try making your doough with a little bit of extra hydration to see if that helps.
AND: no I do not have a sour dough starter or recipe but I am sure here in the forum we can find an answer...
Any suggestions for sour dough starters? _________________ "Pizza on Earth...Good Will to All!"
