Great question, Dale. I do not have such a recipe.

With one of my conversations with Peter Reinhart, he explained the problem with making pizza with whole wheat is that the dough needed to be hydrated. That is extra water needed to be added to the recipe.

I have never tried a whole wheat pizza dough my self.

I would think the best way to start would be to use half whole wheat and half white flour.


But that is my opinion.

Can any member here, help out Dale?
