We have been going there for over 30 years and the crust is the secret to the pizza. We order the medium and put the our toppings, when the pizza arrives, it’s to die for.

We often will have them make an extra 10 or more, they cook and wrap, and we will freeze them and take them back to Phoenix to experience it all over again.

The crust is somewhat chewy, not soggy, and light yellow coloring. We have been trying to master the dough but have not come close.

Any ideas?

As far as making their pizza....

I have no idea.

I would try to ask them and maybe they would tell you...

But that is something I have always stayed away from.

I make homemade pizza. Period. It is my own pizza.

The only person I know who claims to have the ability to deconstruct pizza is my friend Peter Reinhart.

Good afternoon, Albert,

Thank you for responding, I already knew the answer of the dough before I sent to you. The reason we keep going back is that the pizza draws us back, as with all great restaurants.

If we knew their secret, and made it at home, we would still be missing their special knead they put into making the pizza.

And yes I do enjoy eating at Pizza Bianco, the first time we waited about 2 hours to get in. Every time I go, it’s always an experience.

Another place in Phoenix is Uncle Sam’s, they now have three locations. Thank you for all your great info on Pizza, I am always trying to perfect my own, it’s a feast in progress!

And that is so true...great pizza always draws you back...it's kind of like a legal highly addictive drug..once you get a taste once and it strikes a chord in your soul...
