Whole Wheat Pizza Dough
Jon F. shares his whole wheat Pizza Dough:
Ingredients:
•3/4 cup King Arthur whole wheat flour or equiv.
•3/4 cup King Arthur Unbleached white flour or equiv.
•1/2 teaspoon salt
•1/8 teaspoon yeast
•2/3 cup iced water
Directions
1.Mix all ingredients in a Kitchenaid mixer until blended,Knead mixture on floured board for a few minutes.
2.Knead mixture on floured board for a few minutes.
3.Put in oiled bowl and cover with plastic wrap before putting in refrigerator for and 18 to 24 hour cold fermentation.
4.Take out about one half hour before using.

First - iced water?
Yeast needs warm water - 105 degrees to activate, so why bother using ANY yeast? It won't do anything.
Second - 1/8 teaspoon yeast is not enough (even if you used the correct water temperature), not even close enough to consider.
You wouldn't use less than 1/2 teaspoon per cup of flour, and in this recipe he is using a cup and a half of flour, so I'd have to make that 3/4 teaspoon to make it work.
Of course, with iced water, the yeast is useless whether he used 1/8 teaspoon or 10 Tablespoons.
I'm willing to give him the benefit of the doubt, but what am I missing?

Believe it or not, the yeast will activate, even with cold water.
The key is doing it the day before...
This recipe works...
Try it....
