Hi ALbert,
I made two versions of the dough using King Arthur's unbleached bread flour in one and Bob's unbleached flour in the second. Bob's flour made a far superior crust.
Looking to try a flour specifically designated "high gluten" alkthough Bob's may fit the bill. Bought a hearthstone kit from ebay and it is making a huge difference.
