My tip is watch the fish turn opaque from the bottom up. When almost to the center flip over. When almost to the center again take off and let rest - tenting with foil but not cutting off all the air. This will finish cooking the fish without worry of overcooking. If you have other things to do the fish will hold quite well like this.
