"Many small things go into making Pepe's pizza.
One tip that comes to mind is the oven temperature,
600 to 700 degrees is optimal. Unfortunately these temperatures
cannot be reached on a conventional oven.
But some older ovens can be tricked into higer temps. How? You ask.
If the oven has two controls you can set one control on bake
and the other control has a bake and broil setting usually
stopping at 550 deg. but there is sometimes a gap between
550 and broil .
Go past the 550 mark just before the broil setting
and this will add an extra 50 to 100 deg.
Oh yes always use a pizza stone! Alan" _________________ "Pizza on Earth...Good Will to All!"
