Hi Vincent.
Thanks for writing.
You can use the dough recipe and omit the olive oil...no problem.
Keeping your dough in the fridge for 1 week should be OK.
Here my be the problem:
What temperature did you cook your pizza?
First: pre-heat your oven for an hour.
Your oven needs to be minimum 500+ F.
Minimum.
Also: don't pile to many toppings on your pizza. Remember when you make pizza:
less is more.
try it again, and please let me know how you make out.
