I've noticed that my crust tastes much better if I do an overnight rise in the fridge (after the first rise).

I agree Thick Crust.
I think the overnight rise really makes a big difference in taste.
Peter Reinhart told me this in one of our conversations.
He said letting it rise in the fridge allows the dough to impart itself with a richer flavor.
I really think this was one of the absolute best pizza tips I have ever gotten.
I used to make my dough, let it rise for a a couple of hours, and then start making pizza, but no more.
I always make my dough the day before.

i agree, overnight is the way to go. also, most doughs freeze well also. i make a big batch of dough roll out several balls for future use. put some oil on them and store in freezer bags. throw them in the frig. the night before or morning of use. |
