|The dough recipe was “off” on the liquid so I fixed that (in the recipe below). I also baked this on my pizza stone, only pre-baking for a few minutes first. This was very good (rich & filling), next time I’ll add some smoked chicken.
Jalapeno Pesto Pizza with Feta and Sun-Dried Tomatoes
1 recipe Hot Pizza Dough (posted below)
1 c. fresh basil leaves
1 c. cilantro leaves
3 cloves garlic (I used 5)
3 jalapenos, seeded and quartered (I used 5 large)
1/2 c. pistachios, shelled
1/4 c. pine nuts, toasted
1/2 c. olive oil
Combine the above in a food processor and pulse until a paste forms. Set aside
2 T. olive oil
3 medium onions, sliced thin
Saute the above until caramelized, about 15 minutes.
Preheat oven to 425º. Bake dough for 20 minutes, remove and set aside.
1 c. sun-dried tomatoes in oil, chopped
2 c. feta cheese, crumbled
Spread the pesto over the baked dough and spoon on the onions, then tomatoes and feta cheese, bake for 5 minutes longer.
Hot Pizza Dough
1 c. warm water
1 T. olive oil
1 t. salt
1 T. red hot pepper flakes
3 c. flour
2 1/4 t. active dry yeast
Combine in bread machine as directed using dough cycle.
