ok,, i usually let dough set in frig for 12 hours... But in a pinch you can proof like a champ.... Here is how,,, take 2 to 3 paper towels and drench them in water.. Then stick the wet paper towels in the microwave for 2 minutes under full power and there you have it,,, a humidified,warmed and sealed place,,, to power proof dough...

Do you use less yeast when you let your dough set in the fridge?

I use the same amount of yeast. By doing that i can try to come up with a consistant recipe for pizza dough... What i mean by that is a prefect balance between my indgredients and my household equipment... i use a run of the mill household electric oven,,, but hopefully by dailing in my recipe i will know exactly what my controls and variables are.. Then i can start to use that data and use other cooking sources and not,,,, hopefully have to spend too much time and product to dail the recipe in..
