My Response:
You are asking great questions.
I know that you can take sour dough and use it as a starter for bread.
I would think if you were making a sour dough pizza crust you could do the same thing.
Plus, I think a sour dough pizza crust would taste great...
As far as Beer Yeast...I think (but do not know) Beer Yeast is a different yeast....
For the definitive answer, I will defer to the experts here at this Forum.
Can anyone help with the answer to these questions?

There are many different types of yeasts, and they function in different ways. For example, see the article at http://www.yeastgenome.org/VL-what_are_yeast.html and you will see how, in brewing, some yeasts are used for lagers (bottom fermenting, at cooler temperatures) and others for ales (top fermenting).
There is a distinction between "baker's" yeast and "brewer's" yeast. I am a home brewer, and I have found there are many different yeasts available for brewing.
