Eric writes:

Good evening,

I was wondering if you have tried Pizza from ĎThe Cloverleaf Taverní in Tacoma Washington, or have heard of them.

We have been going there for over 30 years and the crust is the secret to the pizza. We order the medium and put the our toppings, when the pizza arrives, itís to die for.

We often will have them make an extra 10 or more, they cook and wrap, and we will freeze them and take them back to Phoenix to experience it all over again.

The crust is somewhat chewy, not soggy, and light yellow coloring. We have been trying to master the dough but have not come close.

Any ideas?

Hi Eric,

Hi Eric, thanks for the tip.

I have included your review and comments about Cloverleaf Tavern at this page:

http://pizzatherapy.com/best-pizza-in-washington.htm

As far as making their pizza....

I have no idea.

I would try to ask them and maybe they would tell you...

But that is something I have always stayed away from.

I make homemade pizza. Period. It is my own pizza.

And as I say in the promo for my e-book:

I cannot tell you how to make anyone elses pizza...

You can check out my best selling e-book here:

http://thelegendsofpizza.com/pizzabook

The only person I know who claims to have the ability to deconstruct pizza is my friend Peter Reinhart.

He says he can taste any pizza and immediately tell you how to make it.

You can check out my review of his book American Pie at this link:

If you want to learn to make many different types of pizza, it's a must have book!

Good luck in your pizza quest. And if you do find out, please let me know,

P. S. If you live in Phoenix, I'm sure you have tried Chris Bianco's pizza...
What did you think? He is a pizzaiolo's pizzaiolo.
Probably the most celebrated pizza maker in the US if not the world!

Good afternoon, Albert,

Thank you for responding, I already knew the answer of the dough before I sent to you. The reason we keep going back is that the pizza draws us back, as with all great restaurants.

If we knew their secret, and made it at home, we would still be missing their special knead they put into making the pizza.

And yes I do enjoy eating at Pizza Bianco, the first time we waited about 2 hours to get in. Every time I go, itís always an experience.

Another place in Phoenix is Uncle Samís, they now have three locations. Thank you for all your great info on Pizza, I am always trying to perfect my own, itís a feast in progress!

Have a Happy Easter today.

Eric
