A best of both worlds?
We have pizza almost every week (when Survivor is on) and yesterday I wasn’t in the mood for “pizza”. I searched high and low for a pizza pasta recipe and found one close to what I had in mind.
I had to change it up some because as written, it would have been to bland for us. We loved the end result. The house smelled like pizza and the casserole tasted exactly like a pizza!
Here is how I made it -
Pepperoni Pizza Casserole
2 cups uncooked macaroni
2 Eggland's Best Eggs, lightly beaten
1/3 cup grated Parmesan cheese
1/4 cup sour cream
1/2 teaspoon Italian seasoning
1 (15 ounce) can pizza sauce
2 cups (8 ounces) shredded part-skim mozzarella cheese
30 slices pepperoni
1 can (2-1/4 ounces) sliced ripe olives, drained
Diced jalapenos
Diced sweet onion
Diced red bell
Oven at 375°
Cook macaroni according to package directions; drain and rinse with cold water. Stir in the eggs, Parmesan cheese, sour cream, Italian seasoning, 1/2 the pizza sauce, 1/2 the cheese and 3/4 of the “toppings”. . Transfer to a greased 11-in. x 7-in. baking dish. Spread with the other 1/2 of the pizza sauce, sprinkle with the remaining mozzarella cheese; top with pepperoni and olives and other toppings. Bake 30 to 45 minutes, until bubbly hot. Let stand 5 minutes before serving.

Pizza taste without the takeout? Believe it! With great pepperoni flavor, this recipe will give the whole family an easy alternative on pizza night. —Mary Shivers, Ada, Oklahoma
1-1/2 cups uncooked elbow macaroni
2 Eggland's Best Eggs, lightly beaten
1/3 cup grated Parmesan cheese
1/4 cup sour cream
1/2 teaspoon Italian seasoning
1-1/2 cups pizza sauce
2 cups (8 ounces) shredded part-skim mozzarella cheese
30 slices pepperoni
1 can (2-1/4 ounces) sliced ripe olives, drained
Cook macaroni according to package directions; drain. Stir in the eggs, Parmesan cheese, sour cream and Italian seasoning. Transfer to a greased 11-in. x 7-in. baking dish. Bake at 375° for 10 minutes.
Spread with pizza sauce. Sprinkle with mozzarella cheese; top with pepperoni and olives. Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.
Yield: 6 servings.
